After a great holiday trip we're back at home. Felt like cooking since it's been so long, so made this recipe of sweet potato and kale hash with fried eggs. Very yummy. Steamed some kale from the yard, and left out the shallots and peppers. Forgot how much I love fried eggs. Definitely will make this again.
