- 6 beets, chopped into 1/2 to 1 inch pieces
- 6 cloves garlic
- 1 T olive oil
- 1/2 cup balsamic vinegar
- 1 T brown sugar
- 1 T diced fresh rosemary
- 1 to 1/2 a fresh mozzarella ball (I used about 4 oz)
Now if you want to make it super easy, just roast or steam (or microwave) the beets, and add balsamic vinaigrette and chopped cheese. Done!
