Found this healthy, cheap cookbook online which is one of the best ideas ever. It's FREE for everyone and meant to encourage/enable/simplify healthy eating on a budget. It's called Good and Cheap. I got extremely sucked in by page 26 with a fried egg sandwich with mushroom hash. By the time I got home and turned it into first lunch, speed was of the essence so I ditched the bread. For second lunch I used one of my favorite vegetarian cookbooks my mom got me 15 or 20 years ago on a whim from Costco, and accidentally torched it a little in the process of making the green beans with shiitake mushrooms. DOH! But all ended well. The sous chefs were unimpressed.
