Mushroom goat cheese goodness

2 cups mushrooms slices (white or crimini)
3 cloves garlic
~1 T butter 
5 eggs
1/4 cup cream or milk
~1/2 cup chopped fresh spinach 
1/8 cup parmesan cheese (or more)
4 oz goat cheese (or more)

Made this quiche today and want to be able to recreate it. 
Preheat oven to 350 F. Butter/grease your baking pan. Put some butter/oil in a pan and sautee garlic for 2 or 3 minutes. Add mushrooms and sautee for about 10 minutes until they are soft and most of their juices have boiled off. Lightly beat the eggs and cream or milk, add some salt and pepper. Lay the mushrooms/garlic in the baking pan. Sprinkle the parmesan, goat cheese, and spinach over the mushrooms. Pour the egg mixture on top. Bake for 25 minutes (start looking at it in 20 minutes). Let it cool slightly and enjoy. For more decadence, use cream rather than milk and add even more goat cheese. I always skip the crust, both to avoid the calories and because it's a hassle to buy or make one, but this would also be good with your favorite crust.
